Low Carb Biscuits and Gravy

Ingredients
- 6 Carbquick Biscuits, follow recipe on box for biscuits
- 1 lb breakfast chicken sausage
- 2 tbls Carbquick
- 1 cup heavy whipping cream
- 1 cup water
- 1/4 tsp cayenne pepper
- 1 tsp pepper
- 1 tsp salt
Instructions
- Make the Carbquick biscuits per directions on box – the mix may seem gritty and wet, but follow the recipe they come out great! They will not be flaky or rise much, but they taste great and are low carb! When they come out of the oven brush tops with butter
- Cook the breakfast ground chicken in the pan and crumble up – I use a 10" All Clad Non Stick Pan for this recipe
- When it’s done take two heaping tablespoon of Carbquick, sprinkle over the meat and let it cook for about a minute, do not stir it
- Then combine the whipping cream and water and add it to the meat
- Add a pinch cayenne pepper powder, salt, and freshly ground pepper. Keep stirring until it thickens and turn off the burners
- As it cools the mix will thicken even more, just heat it back up if you are not serving right away. You can always adjust the flour to water/cream mixture as all well to get to your liking
- Top the biscuits with the sausage and gravy , and devour!
This is my Mom’s recipe, she made this for us while I was down visiting her in Atlanta in March. She used Carbquick for the biscuits and you would never know the biscuits were only 2 carbs! I have made a few different iterations of this at home now and it always comes out so good! I can’t believe how quick and easy this is, not to mention one of Alex’s favorite breakfast meals now!
For a non low carb version, just use any biscuits you want! Our favorite is the Jim’N Nicks biscuits mix, but we also use Jiffy Corn Bread mix made into mini muffins, Pillsbury, and sometimes I make homemade.
