Ingredients

  • 12 ounce bag frozen Trader Joe’s cauliflower gnocchi
  • 1/2 cup frozen peas
  • 1/4 sweet onion diced
  • 1 tbls pesto
  • 5 leaves basil chopped
  • 1 tsp olive oil

Instructions

  • In a non stick pan over medium heat add a drizzle of olive oil for about a minute until pans warms up
  • Add in peas and gnocchi and let sit for 2 minutes
  • Add in diced onions, stir around every minute or so
  • After about 7 minutes the cauliflower should start to brown just a bit and your onions should be translucent , that is how you know it is done
  • Pour into two bowls, top each with a dollop of pesto and freshly cut basil!

TIPS

  • To cut basil, stack the leaves and roll them up. Use scissors to cut the roll in thin strips directly into your bowls
  • This dish would be really good with bacon too, chop it up and toss it in at the end!
  • Basil is a great plant to have growing in a small pot in your house. Store bought basil leaves barely last a week and it cost is basically the same to just buy the plant (which is usually right next to the basil packages in the grocery store). It is much more economical to buy the plant to have at your convenience for so many dishes!
  • Always have diced onions on hand, in your fridge and/or freezer. This way there is never any prep, you just pull them out and toss in. We use this tool to dice all of our veggies when we get home from the grocery store so everything is ready to go. If we don’t use them before they start to go bad into the freezer they go. Peppers and onions are great to have frozen on hand!
